How to Make Cottage Cheese Cloud Bread

Quick Overview

Cottage Cheese Cloud Bread is not only delicious but also incredibly simple to prepare. With a prep time of just 10 minutes and a baking time of about 25 minutes, you’ll have a fluffy, golden loaf ready to serve. The key features include its light texture and the savory flavor that complements various meals.

Step-by-Step Instructions

Step-by-step process of making Cottage Cheese Cloud Bread, from mixing to baking.
  1. Preheat the oven: Set your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the eggs: Carefully separate the egg whites from the yolks, placing the whites in a large mixing bowl and the yolks in a separate bowl.
  3. Mix the cottage cheese and yolks: Add the cottage cheese, salt, and any optional seasonings to the yolks. Mix well until smooth and creamy.
  4. Whip the egg whites: Using a hand mixer or stand mixer, beat the egg whites and cream of tartar on high speed until stiff peaks form (about 3-5 minutes).
  5. Combine: Gently fold the cottage cheese mixture into the whipped egg whites. Be careful not to deflate the egg whites to maintain that fluffy texture.
  6. Shape the bread: Using a spatula, scoop the mixture onto the prepared baking sheet, forming 4-6 mounds (depending on your desired size).
  7. Bake: Place the baking sheet in the oven and bake for 25-30 minutes, or until the tops are golden brown and firm to the touch.
  8. Cool and serve: Allow the cloud bread to cool slightly before enjoying it warm or at room temperature.

What to Serve with Cottage Cheese Cloud Bread

Cottage Cheese Cloud Bread is incredibly versatile! Here are a few suggestions for complementary side dishes and toppings:

Top Tips for Perfecting Cottage Cheese Cloud Bread

Side-by-side comparison of perfect and common mistakes in Cottage Cheese Cloud Bread.
  • Ingredient substitutions: If you want it to be dairy-free, try using silken tofu instead of cottage cheese.
  • Time-saving techniques: Prepare the batter ahead of time and store it in the fridge for quick baking later.
  • Common mistakes to avoid: Ensure your egg whites are whipped to stiff peaks for the best texture and don’t overbake, as it can dry out the bread.

Storing and Reheating Tips

To store your leftover Cottage Cheese Cloud Bread:

  • Refrigeration: Place the bread in an airtight container and store it in the fridge for up to 3 days.
  • Freezing: You can freeze it for up to 3 months. Just make sure to wrap each piece tightly in plastic wrap and place it in a freezer bag.

For reheating, simply pop it back in the oven at 350°F (175°C) for about 5-10 minutes to regain that fluffy texture.

Failed miserably

24/03/2025

There is no way I could have made small rolls, the mixture was super runny. What did I do wrong?

Anne

Response from floury recipes

Hi there, thanks for sharing your experience. Cloud bread can be a bit finicky depending on the cottage cheese brand and its moisture content. For small rolls, you might try draining your cottage cheese a bit longer or even using a thicker variety to help the mixture hold its shape better. Also, ensuring you’re whipping the eggs until they’re fluffy and incorporating them gently into the mixture can improve consistency. Let me know if these tweaks help – happy baking!

Eggy

17/03/2025

Mine were very eggy tasting. Needed flour I think. They raised somewhat, but second pan I had to put in muffin cups. Wasted 9 eggs cause I tripled it.

Belinda

Response from floury recipes

Thank you for your feedback! It sounds like the eggy flavor was stronger than expected. Adding flour or a bit more cottage cheese could help balance it next time. Using muffin cups was a great fix for the second batch! Let us know if you try any tweaks—we’d love to hear how it goes! 😊

Mixed instructions
